We would like to know how we can create a user defined variable we used to do in jmeter. For example a server name variable to change the server name in one place rather than doing it in all urls

For servers, in NeoLoad you can just use a variable in the "hostname" field so all the URL's using that server points to the new one. Actually your URL's are using the logical name of the server which remains the same so you can only change the hostname field.
